Peanut Butter Protein Packed Granola

This peanut butter protein granola is loaded with extra health benefits, has a sweet and salty flavor and will give you an added boost of energy.

The new year is always a time when health and eating well is on our minds. Not saying we can’t eat well year round, however, why not try to make improvements where we can, right?!

I am a big proponent of breakfast foods any time of day. This granola would be a great addition to a morning bowl of yogurt or as an afternoon pick me up.

This delicious peanut butter protein granola would be great on top of my slow cooker greek yogurt!

Tools you may need:

mixing bowl

spoon

baking sheet

parchment paper

measuring cups & spoons

Ingredients:

3 cups Rolled oats

3 TBS powdered peanut butter

1/4 cup vanilla protein powder (I like this one)

1/2 cup almonds or nut of choice – chopped

1/3 cup maple syrup

1/3 cup melted coconut oil

How to make Peanut Butter Protein Packed Granola

Preheat oven to 325 degrees Fahrenheit.

In a large mixing bowl add the rolled oats, powdered peanut butter, protein powder. Chop your almonds, or use pre-chopped, and add to your mixture.

Pour in your maple syrup and melted coconut oil. Stir mixture until all dry ingredients are well combined.

Dump the granola onto the parchment lined baking sheet. Bake in the 325 degree oven for 45 minutes, stirring every 15 minutes.

Remove from the oven and let cool.

Enjoy on top of your favorite yogurt or just snack on it plain.

Store the granola in a sealed container for 7-10 days.

Notes for granola making:

This recipe is gluten free since it uses oats.

I like to use Purely Inspired Organic Protein powder, however, feel free to use whatever suites you or you can substitute more powdered peanut butter.

This recipe was not tested with honey as the sweetener, however I am sure it would work as well.

I used chopped raw almonds, but any nut or mixed nuts would be fine.

Do not over bake and do not forget to stir. It will get burned on the edges and not taste right.

    What is the difference between “powdered protein powder “ and (vanilla) protein powder?

      I see now, there is an error in your ingredient list. It should be powdered peanut butter (not powdered protein powder).
