I am always looking for different ways to use my discard. Creating a food is a much better use of it than throwing it out. This sourdough applesauce bread is one that I have been making as a snack for my girls or part of our breakfast.
This is a quick bread recipe that uses ingredients you probably already have on hand. I’ve changed a few ingredients from the normal sweet bread to make it a healthier alternative. Simply just mix everything together, bake and enjoy!
There is nothing better than a fresh baked goody right out of the oven!

What is a quick bread?
Even with using discard this recipe is a quick bread. A quick bread is any bread that uses a leavening agent, such as baking soda or baking powder. It can then immedietly be mixed and baked. Sourdough applesauce bread uses baking soda for it’s leavening agent, therefore qualifying it as a quick bread.

Healthy: This is not your traditional sugar, white flour and canola oil quick bread. Alternatives of maple syrup, discard, and a healthy fat, make this a much better treat.
Great way to use discard: I always dislike throwing my sourdough discard away. This recipe is a perfect way to use some of that discard and help it not go to waste!
Delicious: This bread is so tasty and delicious!
Tips for making the best sourdough applesauce bread:
~ Use homemade applesauce! An unsweetened,chunky applesauce from your own shelves is always enjoyable in this bread.
~ Make sure to add the right amount of cinnamon, if not more. This will enhance the flavor.
~ Bake until a toothpick inserted into the bread comes out clean. Otherwise the bread may be a bit doughy.
~ Using sourdough discard or fed sourdough seemed to work for me. I recommend discard as it is a good way to use it up.
Ingredients:
Sourdough discard
Coconut oil or butter
Maple syrup
egg
unsweetened applesauce
cinnamon
nutmeg
unbleached white flour or wheat flour
baking soda
Tools you may need:
Two mixing bowls
whisk or fork for mixing
9×5 loaf pan
parchment paper or oil for greasing pan
How to make sourdough applesauce bread

Preheat your oven to 350 degrees F.
Mix together your wet ingredients. Add your melted coconut oil, maple syrup, egg and applesauce. Stir together and then add the discard.

In a separate bowl combine your dry ingredients – flour, baking soda, cinnamon and nutmeg. Incorporate the dry ingredients into the wet. Make sure it is well combined. The batter will grow some due to the baking soda combined with the discard.

Have fun with the bread and put in some add-ins. Adding some dark chocolate chips, dried cranberries or chopped walnuts, makes this sourdough applesauce bread an even yummier treat!
Pour the batter into a parchment lined 9×5 dish or grease the pan with some oil.
Bake!

Storage
The sourdough applesauce bread is best stored in the refrigerator for up to 5 days. It can be stored in an air tight container on the counter for 2-3 days or frozen for several months. We like to reheat our sliced bread with a smear of butter, apple butter or a nut butter!


Sourdough Applesauce Bread
Ingredients
- 1/2 cup sourdough starter fed or discard
- 1/2 cup coconut oil can also use butter
- 1/4 cup maple syrup can substitute honey
- 1 egg
- 1 cup unsweetened applesauce
- 2 tsp cinnamon
- 1/4 tsp nutmeg
- 1 cup All purpose flour whole wheat or unbleached white
- 1 tsp baking soda
- 1/4 cup dark chocolate chips, dried cranberries or walnuts optional
Instructions
- Preheat the oven to 350 degrees F.
- While oven is preheating, mix the wet ingredients. Add your melted coconut oil, maple syrup, egg and applesauce. Stir that together and then add the discard.
- In a separate bowl combine your dry ingredients – flour, baking soda, cinnamon and nutmeg. Incorporate the dry ingredients into the wet. Make sure it is well combined. The batter will grow some due to the baking soda combined with the discard.
- Add in your choice of dark chocolate chips, dried cranberries, walnuts or omit this step.
- Pour the batter into a parchment lined 9×5 loaf pan or grease the pan with some oil.
- Bake at 350 degrees for 40-50 minutes or until toothpick inserted comes out clean.
- Let sit in loaf pan for 5 minutes then remove onto cutting board or cooling rack.
