Sourdough Applesauce Bread

Sourdough applesauce bread is a naturally sweetened bread that is great as a healthy breakfast option or snack. It's a great way to use some extra sourdough discard.

Ingredients
  

  • 1/2 cup sourdough starter fed or discard
  • 1/2 cup coconut oil can also use butter
  • 1/4 cup maple syrup can substitute honey
  • 1 egg
  • 1 cup unsweetened applesauce
  • 2 tsp cinnamon
  • 1/4 tsp nutmeg
  • cup All purpose flour whole wheat or unbleached white
  • 1 tsp baking soda
  • 1/4 cup dark chocolate chips, dried cranberries or walnuts optional

Instructions
 

  • Preheat the oven to 350 degrees F.
  • While oven is preheating, mix the wet ingredients. Add your melted coconut oil, maple syrup, egg and applesauce. Stir that together and then add the discard.
  • In a separate bowl combine your dry ingredients - flour, baking soda, cinnamon and nutmeg. Incorporate the dry ingredients into the wet. Make sure it is well combined. The batter will grow some due to the baking soda combined with the discard.
  • Add in your choice of dark chocolate chips, dried cranberries, walnuts or omit this step.
  • Pour the batter into a parchment lined 9x5 loaf pan or grease the pan with some oil.
  • Bake at 350 degrees for 40-50 minutes or until toothpick inserted comes out clean.
  • Let sit in loaf pan for 5 minutes then remove onto cutting board or cooling rack.

Notes

The batter should be semi runny and will pour out into the loaf pan.
Make sure to bake long enough, otherwise the bread will have a doughy consistency.
Store in an air tight container on the counter for 2-3 days or in the fridge for 5 days.
