- 1½ cups Oats rolled oats or mix of quick and rolled
- ⅓ cup Raisins
- 1 tsp chia seeds optional
- ¼ cup powdered peanut butter optional

Preheat the oven to 375 degrees.
In a mixing bowl mash the 2 over-ripe bananas with the fork. Once mashed, combine the rolled oats, raisins and any other additions you wish. Stir together until well combined.
On a parchment lined baking sheet drop the banana cookie dough into large tablespoon mounds. These cookies do not rise or spread so they can be closely placed.
Bake the cookies in the 375 degree preheated oven for 8-10 minutes. The cookies are done when they are slightly browned and just soft to the touch.
Let cool for several minutes before removing and placing on a cooling rack.
Storage Tips:
These cookies should be stored in the refrigerator and will last up to 5 days.
If freezing, store in an airtight container for up to 3 months.
Additions: The options are endless for additions in these cookies. Some options that I enjoy are chia seeds, powdered peanut butter, dried cranberries, mini chocolate chips.
