Easy Taco Skillet Bake

This taco skillet bake takes less than 30 minutes to complete. It has simple ingredients that come together to make a delicous meal.

Ingredients
  

  • 1 lb hamburger
  • ½ cup onion chopped or diced
  • 1 cup salsa your choice of heat
  • 1 cup corn frozen or canned
  • 15.4 oz canned tomatoes home canned works too
  • 1 cup cheddar cheese shredded
  • ½ tsp chili powder
  • ¼ tsp cayenne
  • 4 flour tortillas cut into 1 inch squares or torn in pieces
  • 1 tsp salt
  • ½ tsp pepper

Instructions
 

  • In a large skillet brown your hamburger on medium heat. Add in your onion and cook until translucent. Season with salt and pepper.
  • To the cooked hamburger add in the canned tomatoes, corn, salsa, chili powder and cayenne.
  • Fold in the cut tortillas and cook on medium low for 10 minutes, stirring occasionally.
  • Once the skillet bake has cooked through, top with the shredded cheese.
  • Top the taco skillet bake with fresh avocado and sour cream. This serves well with a side salad and tortilla chips.

Notes

~ I like using home canned tomatoes instead of store bought.
~ Use fresh garden tomatoes when they are in season. If using fresh tomatoes it will require longer cooking time.
~ Use any tortilla you like. I have tried it with store bought flour, corn tortillas and raw tortillas. If using corn tortillas, use 6 instead of 4.
~ Increase or decrease the spice level with mild, medium or hot salsa.
~ Brown the hamburger ahead of time to make prep work even faster.
