Best Sourdough Discard Applesauce Yogurt Bread
This sourdough applesauce bread is full of all the fall flavors with the additions maple syrup, cinnamon, clove and nutmeg. The greek yogurt makes this bread very moist and has added protein. Add this bread to your next breakfast menu or brunch gathering!

- ½ cup butter or coconut oil melted
- ⅓ cup maple syrup
- ¾ cup applesauce unsweetened
- ½ cup sourdough discard
- ⅓ cup greek yogurt plain is best
- 2 eggs
- ½ tsp baking soda
- 1 tsp baking powder
- 1½ tsp cinnamon
- ½ tsp ground cloves
- ¼ tsp ground nutmeg
- ½ tsp salt
- 1½ cups all-purpose unbleached flour more may be needed depending on how runny the discard was you used.
Preheat oven to 350 °F
In a medium bowl combine all the dry ingredients - flour, cinnamon, ground cloves and nutmeg, salt baking soda and baking powder. Whisk gently until combined. Set the dry ingredients aside.
In another mixing bowl combine the the melted oil with the maple syrup. Add in eggs and whisk until combined. Stir in the applesauce, greek yogurt and sourdough discard.
To dry ingredients, pour in the wet ingredients and stir until thoroughly mixed.
Add the chopped walnuts and raisins if using.
Pour batter into a greased 9x5 bread pan.
Bake for 50-60 minutes or until toothpick inserted in bread comes out clean.Let rest in pan for 10 minutes before inverting onto cooling rack. Enjoy bread with some butter or a slather of peanut butter!
- Sourdough discard seemed to work better for me in the recipe over fed sourdough.
- Unflavored and unsweetened greek yogurt is recommended over any sweetened or just plain yogurt.
- Any applesauce will work for this recipe. I just prefer using my homemade slow cooker applesauce.
- This recipe has not been long fermented tested.
