Einkorn Protein Applesauce Muffin
This einkorn applesauce protein muffin is a perfect addition to healthy eating. The sweetness of applesauce, the added protein with the greek yogurt and the ancient grain of einkorn, makes this an all around must have for an addition to a breakfast or snack.

- ½ cup oil butter or coconut oil, very softened
- ¼ cup maple syrup
- ½ cup unsweetened applesauce
- ⅓ cup greek yogurt whole fat is best
- 1 egg
- 1 tsp cinnamon
- ¼ tsp ground cloves
- ½ tsp salt
- 1 tsp baking soda
- 1¾ cup einkorn flour
- ⅓ cup chopped nuts walnuts are my preference
- 1 small apple or pear chopped
Preheat oven to 350 °F
In a mixing bowl combine the oil and maple syrup. Whisk in the unsweetened applesauce, greek yogurt and egg until well blended.
Measure in the dry ingredients of salt, cinnamon, ground cloves and einkorn flour. Stir together. The mixture will be a little thicker in texture due to the einkorn flour.
Fold in the chopped nuts of choice and the cut up apple or pear.
Spoon the muffin batter into the greased or lined muffin tin. Fill the muffin cups about 3/4 the way full.
Bake in the preheated oven for 18-22 minutes or until toothpick inserted into the middle comes out clean.
Let cool for 5 minutes before taking out of the muffin cups.
Serve fresh with butter or honey or store in the fridge for 3-5 days.
Use unsweetened applesauce in the batter. I like to use my homemade cinnamon applesauce for it's added flavor.
Whole fat greek yogurt is used in this recipe for it's creaminess and higher protein content. The recipe has not been tested with other types of yogurt.
Add any type of chopped nut or omit them all together. I prefer using walnuts in this recipe.
Chopped pear also makes this recipe delicious and adds an additional sweetness.
Make the muffins ahead of time and freeze them. Pull them out as needed and thaw them a few hours in advance of eating or microwave for 10-15 seconds.
